Avocado flatbread...sattvic deliciousness

So in love with these little avocado flatbread treats....enjoyed them today in bed with an episode of "Brittania"...although I'm still not sure if I like the series or not, we definitely LOVED and thoroughly enjoyed these amazing flatbread treats. They're vegan, sattvic, and so very satisfying :) ENJOY


Ingredients:

1 avocado

1 cup whole wheat organic flour (I used a mix of 1/2 cup whole wheat rye+1/2 regular whole wheat)

1 pinch of salt

1tsp of squeezed lemon juice

1 pinch of pepper


Take the avocado and mash it into a bowl until it is almost creamy.

Put the cup of flour in a separate bowl.  Add the spices and salt on the flour and stir through the flour.

Then add the avocado mash and first stir it through the flour before you knead it with your hand until a consistent dough. (It is a little sticky at first, so use a fork, then when it starts to thicken, use your hands)

Create one big ball and wrap in foil. Let the dough rest for 10-20 minutes.

Cut the ball into four equal pieces (the size of a golf ball).

On a wood surface, sprinkle a good amount of flour, place the ball of dough on the flour and press it till it gets flat, then sprinkle more flour over it, use a rolling pin to roll out the flatbread slowly. Don't make them too big, about the size of a tea saucer.

Heat a thick, non-stick pan on medium heat and brush the skillet with clarified butter when the skillet is warm. Cook the avocado flatbread about a minute per side or until brown patches appear.

Keep warm in a clean tea towel.

When they are all ready, you can eat them with hummus, or fold them in half and stuff them with slices of avocado and rocket salad, and/or baby tomatoes, fresh goat cheese, grated parmesan, cottage cheese, or any other filling you like.

We had them stuffed with avocado, rocket salad, and grated parmesan cheese....so so delicious!
