The joy of Guacamoli

With summer in full sway, and this year’s revival of leotards, flowy skirts, classy one piece bathing suits, and bohemian lace, I’m just loving this August! All we need now is a summer party: a bit of Guacamoli and whole wheat bread sticks, lemonade, and we’re ready to greet the sun with friends and family out on a beach or in a sunny vegetable garden

  • 6 ripe Avocados

  • 3 tomatoes

  • a handful of chives

  • the juice of 1 small lemon

  • salt

  • pepper

  • 3 tbsp of olive oil

Peel and pit the avocados, place them in a bowl and, with a fork, mash and mix them well till they are a soft pulp. Chop the tomatoes very finely and add them to the avocado mix. Chop the chives and add them as well, along with the lemon juice, olive oil, salt, and pepper.


Enjoy as a dip with bread sticks, corn wedges, or toast for a wonderful snack ala Messicana!!

Some avocado facts: There’s only one thing to say about avocados: They’re just about the healthiest thing you can eat. They are rich in nutrients and vitamins like Vitamin K, Folate, Vitamin C, Potassium, Vitamin B, and E and are full of monosaturated fats (the healthy ones), and antioxidants.
